healthy blueberry muffins 

I made a commitment about six months ago to get healthier. A friend referred to me nutritionalist that she had used and loved- i wanted a lifestyle change- yes i knew i should eat fruits, veggies and protein but i didn't know how or where to start. Anyways long story short we are learning new ways to cook and new foods to eat- we gave up soda- and "most" sugars (on occasion we still will have some candy and sweets- because i NEED a little chocolate in my life!)- we did things like switching whites for wheats and ground beef for ground turkey- we are learning to use food as fuel! It has made such a difference! But before i get rambling again here's a great recipe i came across for some delicious muffins! 

Makes 12 muffins (or 24 mini muffins) 
3/4 cup low fat milk
1/2 cup natural applesauce (i added a little cinnamon) 
1 egg
1 cup all purpose flour
1 cup whole wheat flour 
1/2 cup sugar 
3 teaspoons baking powder 
1 teaspoon salt 
1 cup fresh blueberries

Blend milk, applesauce, egg in a small bowl and set aside. Stir flours, sugar, baking powder, and salt in a medium bowl. Make a well in the center and pour wet ingredients into the well. Stir with a spoon just until the flour is moistened (batter will be lumpy). Fold in blueberries. Divide batter among muffin cups. Bake until golden brown; regular size muffins bake in 18 to 20 minutes, mini-muffins bake in 10 minutes. Immediately remove from pan.

Yum! I need to go make some more!
